The Wiri Wiri cherry chili originally comes from Guyana and is now also cultivated in Ecuador. The tropical climate allows the small, dark red fruits to ripen evenly and gives them their distinct yet balanced heat.
The whole chilies are gently dried, cleaned and sorted to preserve their colour, essential oils and spiciness as well as possible. When cooked, they slowly release their aroma and can easily be removed before serving.
Their flavour is fruity, with a subtle tomato note. Wiri Wiri adds a distinctive South American heat to sauces, marinades, soups, stews, braised dishes, chili oils and chili pastes.
