Intense, green, fruity olive oil with distinct notes of freshly cut grass and green tomato. This blend of Lazzero, Moraiola, Frantoio, Leccino and Pendolino olive varieties is characterised by freshness and harmony combined with excellent flavour stability. Perfect with legumes, especially chickpeas and cannellini beans, fresh cheese, cooked fish or white meat.
The Fop family estate is set in the Pisan Hills of Tuscany, just a few minutes’ drive from Cecina. Around 20 hectares of cultivated land with olive groves and woodlands surround the historic farmhouse, once a monastery and now carefully renovated for guests.
Originally active in industry, the Fop family has evolved into entrepreneurs in organic farming and hospitality. Their guiding principles are eco friendly construction and consistent sustainability.
The olive trees are cared for naturally and protected from insects and pests without harsh methods. After harvest, the olives are stored for no more than four hours and pressed the same day in the estate’s own mill. A two stage MORI TEM system without added water helps preserve the oil’s valuable components. Thanks to their dedication and careful stewardship of traditional know how, they have earned their first international awards within just a few years.
