Emmer is an ancient grain, light, easily digestible, and known for its fine, aromatic flavour. The semi-white flour is perfect for breads, delicate pastries or pasta making. Emmer is rich in valuable proteins but differs in its protein structure from common wheat. For this reason, we recommend baking breads made with pure emmer semi-white flour in a tin, as the dough tends to spread. Also known as “two-grain,” emmer belongs to the ancient wheat family. As a hulled grain, it is considered a forerunner of spelt, soft wheat and durum wheat, and has been only minimally altered by breeding.
