Farina bóna is a traditional product from the Onsernone Valley in Ticino. This gluten-free corn flour is made through the exceptionally fine milling of gently roasted corn kernels.
Its aromatic roasted flavor lends cakes, pastries, shortcrust doughs, crêpes, and spätzli a distinctive note. For baked goods, it is recommended to replace about one quarter of the flour with Farina bóna. It is also excellent as a thickening agent for salad dressings or as a coating for fish and meat instead of cornstarch.
