Farina bóna is a traditional speciality from the Onsernone Valley in Ticino. This gluten-free maize flour is made from gently roasted corn kernels that are finely ground, giving it its distinctive, intensely aromatic roasted flavour.
Farina bóna adds a unique character to cakes, pastries, shortcrust pastry, crêpes and spätzli. For baking, around 25 per cent of the usual flour can be replaced with Farina bóna. It is also suitable for thickening salad dressings and soups, as well as for coating fish, meat or vegetables.
