Foglie di Mais, translated as “corn leaves”, are traditionally made in the mountains of the Langhe. The dough is made using a simple mixer and the biscuits are shaped with a cookie cutter. All the other steps are done by hand. The cookies are healthy and wholesome thanks to the use of unrefined maize from native Langhe maize varieties.
They go perfectly with tea and coffee, but as they are not particularly sweet, they can also be eaten with fruity red wine or sweet wine.
