Black olives with pits from Cerignola in Apulia. These large olives, preserved in brine (salamoia), are characterized by their particularly fleshy pulp, firm texture, and mildly spicy flavor. Compared to green Cerignola olives, they are spicier and softer to the bite. They are cultivated by Fratepietro using traditional methods on the fertile soils of southern Italy and carefully harvested by hand. Ideal as an antipasto or as a flavorful ingredient in Mediterranean cuisine.
