Black lemon is created through a gentle maturation process under controlled humidity and temperature. During this process, the aroma of fresh lemons becomes concentrated and develops into an especially intense and layered flavour. This classic ingredient of Persian cuisine, known as loomi, is now also widely appreciated in many other Middle Eastern countries.
