Miso is a Japanese spice paste and is basically made from fermented soybeans with varying amounts of rice, barley, other grains or pseudo-grains and table salt. For this miso from Patrick Marxer’s “Das Pure” in Wetzikon, Swiss mushrooms were used instead of soybeans.
Its flavour is distinctly umami: savoury, salty and aromatic. It can be used in soups or as a flavourful base for salad dressings, sauces or fried tofu.
