This balsamico, aged for over 40 years, corresponds to the quality designation “tradizionale” and is suitable for seasoning sauces. A few drops over vegetables, cheese and also desserts such as vanilla ice cream, crème variations or fruits is a real delicacy.
Aceto Balsamico comes from the region around Modena, in Emilia Romagna. Unlike traditional vinegar, Balsamico is made from cooked grape must. Despite its dark colour, it is partly made from the white Trebbiano grape and the red Lambrusco.
Balsamico gets its incomparable aroma from being stored in wooden barrels of various woods such as oak, cherry, chestnut, ash, juniper or mulberry. The variation in temperature and humidity is exploited for evaporation and thickening (concentration of sweetness and flavour). The older it is, the more concentrated and thicker it becomes.
