Basmati literally means “Queen of Fragrance”. The fertile soils and mineral-rich waters of the mountain rivers at the foot of the Himalayas give this long-grain rice its delicate, slightly nutty flavour and characteristic aroma. When cooked, the grains remain light and separate, making it an ideal accompaniment to Middle Eastern and Asian dishes. It is easiest to prepare in a rice cooker.
