Grown in Apulia, the bean is medium in size and has a spectacular speckled light brown and red skin. Borlotti beans, also known as cranberry beans, have a creamy texture and a chestnut-like flavour. Originating from Central America, the bean makes a great minestrone and is excellent for a bean salad.
Preparation: soak for about 12 hours and boil for 50 minutes.
