This cinnamon is derived from the bark of the Cassia tree and is considered one of the most aromatic varieties, with an exceptionally high content of essential oils (up to 7%). Cassia cinnamon comes from mature trees. Its bark is thicker and coarser than that of the more delicately rolled Ceylon cinnamon, which is harvested from younger shoots. It naturally contains more coumarin – a fragrant plant compound also found in woodruff and tonka beans.
With its sweet, earthy flavor, Cassia cinnamon enhances not only holiday baking and cakes but also pairs beautifully with Indian meat dishes, orange salads, compotes, tagines, pastillas, and hearty stews.
