This chocolate is made from the unique and rare wild cacao Criollo Amazonico from the Beni province in the lowlands of Bolivia. The collectors, mostly Chimane Indians, search for the widely scattered cacao islands, harvest the ripe fruits by hand, and transport them by horse or dugout canoe to the collection point. There, the beans are carefully fermented and then dried in the sun. For the rest of the year, the trees remain entirely in their natural state without fertilisation or pruning.
The full and balanced cocoa profile is complemented by fresh lemon notes and the fruitiness of grapefruit. The traditional production process brings out a refined bouquet of dried plums and vanilla.
