Peschiole are small peaches harvested while still unripe, before the stone has formed. They are traditionally preserved in a sweet-and-sour vinegar brine, which gives them their distinctive flavour. With their crisp texture, they resemble large olives in appearance, yet surprise with a delicate fruity, pleasantly sweet-and-tangy taste – and, of course, without a stone.
Peschiole are perfect as an aperitif and pair beautifully with cheese, cured meats or fondue when served whole. Sliced, they add a distinctive touch to fish dishes, salads and crostini.
Our Peschiole (Pesche acerbe in agrodolce) come from the Campania region of southern Italy and are produced exclusively by Azienda Agricola Verticelli.
