Miso is a traditional Japanese seasoning paste, generally made from fermented soybeans combined with varying proportions of rice, barley, other grains or pseudocereals, and salt. For this miso by Patrick Marxer’s “Das Pure” in Wetzikon, Swiss lentils are used instead of soybeans.
Its flavour is distinctly umami: savoury, salty and aromatic. It can be used in soups or as a flavourful base for salad dressings, sauces or fried tofu.
