Kernotto is made from hulled and polished spelt grains. During polishing, part of the outer husk is removed, making the grain more tender and allowing it to be cooked directly like a risotto, without soaking. The result is a particularly flavorful, nourishing, and easily digestible dish with a delicate, nutty aroma.
