The mountain broad bean “Ackerbohnen” or “Bergackerbohnen”, a Pro Specie Rara product, is grown by the Heinrich family in the Albulatal valley. This highly aromatic bean has a pleasantly nutty flavour and can be used in the kitchen in much the same way as chickpeas.
The semolina (Griess) made from it is ideal for polenta, semolina slices, fries, dumplings, gnocchi, croquettes, schmarren and much more.
Thanks to its high protein content of 25-30% and many important minerals, the field bean also provides a long-lasting feeling of satiety. Until the 17th century it was an important staple food in Central Europe. It is also known from Italian cuisine as the fava bean. As a plant, it has the great property of converting CO2 into plant-available nitrogen and making it available for the following crop. In other words, it transports natural fertilizer into the soil.
