The Fazenda Sao Silvestre is located in the southeast of Brazil, in the mountains of Minas Gerais at an altitude of about 1200 metres. Here, one of the best Arabicas in Brazil grows on fertile volcanic soil. Ismael Andrade and his son Rômulo attach great importance to sustainability and the conservation of valuable resources. No chemical fertilisers are used and a specially developed treatment process saves half the water that would otherwise be needed. The approximately 250-hectare coffee plantation produces speciality coffee with respect for the local ecosystem, with great commitment and social responsibility, which regularly achieves top marks in international tastings.
The purchased lot is the microlot (STL18/22), which was harvested in its natural state from the Yellow Catuai variety. The exact processing of this speciality is “natural aerobic fermentation”. The ripe coffee cherries are carefully selected in various steps and then fermented in large, open tanks at 24°C for about 72 hours. The whole cherries are then slowly dried for 22 days. The very controlled fermentation and the slow drying result in the special, full flavour profile.
We do not roast this microlot too darkly so that the bean can optimally develop this complex aroma full of character.
