Dried beans have a long tradition in Switzerland and are particularly popular in the cooler months of the year. We source our dried beans from organic farming here in Aargau.
Preparation: Soak the beans in warm water overnight. Fry the onions and some garlic in colza oil or butter, add the drained beans and deglaze with a vegetable stock. The cooking time is about 50 to 60 minutes. Wonderful with pizzoccheri, buckwheat “Spätzli” or smoked tofu.
