This red pepper speciality thrives in the pepper plantations of the southern Kampot province.
In March, the peppercorns ripen on the vine and turn red. They are harvested by hand, cleaned and dried in the sun. Less hot than black pepper, it is one of our favourite peppers. Aromatic in taste, it has notes of flowers, red fruits, dates and honey.
Goes very well with fish (red mullet), fruit salad, pears, strawberries, chocolate, in pastries or jams.
