Szechuan pepper is a rhombic plant and not an actual pepper. As its name suggests, it originated in central China, but is now planted throughout Asia. Only the reddish-brown capsule is used as a spice, freed from the seeds. Characteristic is the pungent and tingling taste, which causes a feeling of numbness on lips and tongue. In Chinese, this taste sensation is called “má” and is distinguished from ordinary pungency.
An integral part of oriental cuisine, especially with meat and fish.
