This pepper speciality grows on the island of Bali and is botanically known as Piper retrofractum. Its distinctive elongated shape alone makes it immediately recognisable. Freshly crushed, it releases an intense, warm aroma reminiscent of the spice-rich cuisine of Southeast Asia. Its flavour is spicy and earthy, with delicate resinous notes. The finish is pleasantly warm with a subtle sweetness.
Black long pepper pairs beautifully with potato and vegetable purées, lamb and duck, as well as pâtés and pickled vegetables. It also works particularly well with pickles, goat’s cheese preserved in oil, or as an unexpected seasoning in chocolate desserts. Its aromatic character also complements fruit syrups, compotes and melon.
